General Information

It is a crystalline, colorless organic acid commonly found in plants with chemical formula C4H6O6. This product obtained by Carl Wilhem Scheele is high acidity. It is used as an acidity regulator. It is preferred due to its unique aroma. Tartaric acid has four stereoisomers. These are tartaric acid (dexro) tartaric acid in grapes and other fruits, 1 (levo) tartaric acid obtained from the racemic mixture, and meso tartaric acid with dl tartaric acid. Tartaric acid has a synergistic effect when used in combination with antioxidants.

Production and Reactions

It can be obtained as a by-product of potassium during fermentation of wine.

Waste produced in wine production is neutralized with potassium hydroxide. When the precipitated calcium scale is treated with sulfuric acid, tartaric acid is formed.

Usage areas

It is used as the main ingredient in the production of soda ash, as a neutralization or ph-regulator in wine production.

E 334 code in the food industry to give sour apple, sour cherry and other sour taste in hard candies.

It is used as a stabilizer in spices in this sector.

It is used for cleaning and polishing of metals.

Antimony potassium tartar is used as insecticide and mordant.
